Rug up and roll out to Room 81 on the last day of winter, where a flavour-packed feast awaits. This decadent shared dining experience – hosted by Room 81’s esteemed Chef YK and Penfolds ambassador Darelle Naude – will feature six truffle-infused dishes and matching Penfolds drops. It kicks off with taste bud-tempting baked bread with anchovy and truffle butter (if you know, you know), and a range of canapes enjoyed with a glass of Thiénot x Penfolds rosé NV. Once your palette is tingling in anticipation for the heartier courses, devour South Queensland cobia with horseradish and citrus (served with Bin 51 riesling), followed by avocat et caviar made with Fraser Isle spanner crab, dished up alongside a glass of Bin 311 chardonnay. Next up is Homard Espanole – North Queensland crayfish with truffle espanol sauce and petit herb salad – which comes with a Bin 23 pinot noir.
The main affair will arrive in the form of bourguignonne – 24-hour braised beef cheek with champignon mushroom and truffled baby potatoes. Wash it down with Bin 138 shiraz grenache mataro before digging into dessert. Your sweet tooth will be sated with Velours Chocolat – deep velvety textures of Valrhona chocolate and South Queensland berries, served with a Bin 389 cabernet shiraz. Sounds grand to us.
