If you wistfully daydream of spending a summer by the Italian seaside but sadly lack the means to make it a reality, pull up a seat at Cucina Vivo during February and enjoy the summer-inspired degustation menu that is filled with the fresh flavours of the Amalfi Coast. Feast on Appellation oysters before moving onto burratina with San Danielle and Noosa red tomatoes. Next up is Campenelle Salsicca – pork and fennel sausage with asiago and broccolini followed by fillet mignon featuring Stanbroke beef fillet rolled with affumicato prosciutto, brown butter mash and barbera jus. Bring your fantastical feast to a fitting conclusion with a chocolate and hazelnut semifreddo.

The five-course summer feast is $65 per person or for an extra $10 per person, you can pair it with a glass of Woodbrook chardonnay from Central Ranges in New South Wales. Settle in and enjoy the rustic and relaxed setting overlooking The Star Grand’s tropical pool – it may not be the Amalfi Coast but it’s still pretty magical.
